  • 1/4 cup cherry tomatoes, halved

  • 1/4 cup cucumber, diced

  • 1/4 cup grilled chicken breast, diced

  • 1/4 cup roasted red peppers, sliced

  • 2 cups mixed greens (spinach, arugula)


Instructions:

  1. Start with the dressing

  2. Layer with cherry tomatoes, cucumber, and grilled chicken breast.

  3. Add roasted red peppers.
